Now that school is back in session and sports have started back up again, I find myself using my slow cooker multiple times week. I love easy recipes that I can just throw together with little effort, and then have dinner waiting for me. This Fiesta Chicken recipe is so simple it only has three ingredients from Trader Joes! But don’t worry, if you don’t have access to this amazing grocery store, I have included other similar options in this post. Now anyone can enjoy this easy Fiesta Chicken dinner. I promise the whole family will love it!
Over the years, I have tried my fair share of slow cooker recipes. Often times, these recipes include lots of prep work or they actually involve cooking the ingredients before adding them to the pot! To me this defeats the purpose of using a slow cooker, right?
Also, many of the recipes I have tried are not very delicious. Sure they are edible, but I would never make it again. I have had lots of problems making chicken in the slow cooker. It either turns out really dry or totally mushy. Yuck!
My family loves to eat chicken which is why I shared a post on 8 different ways to eat grilled chicken breast and how to make sheet pan chicken tacos. So, I was determined to figure out how to make chicken taste amazing from the slow cooker!
I discovered there is actually a science to making food in the slow cooker. And that the amount of liquid used is very important!
I’m sharing my new found knowledge with you in this delicious slow cooker Fiesta Chicken Recipe. You will only need three ingredients including boneless skinless chicken breast, Trader Joe’s Salsa Autentica, and Trader Joe’s Corn and Chili Tomato-Less Salsa.
What if you don’t live near a Trader Joe’s?
Well don’t worry! I have some suggestions so that you can still make this Fiesta Chicken recipe. You can substitute the Salsa Autentica for any brand of your favorite salsa. But I recommend a less chunky variety so it is comparable to the one sold at Trader Joe’s.
The corn and chili salsa is the star ingredient in this recipe so it is pretty important. Trying to use frozen or canned corn just won’t taste the same. I have discovered that you can by Trader Joe’s Corn and Chili Tomato-Less Salsa online from Amazon! I also found a similar corn relish here that might work in this recipe, but I haven’t actually tried it!

This is such a simple recipe which is great on a busy week night!
I use this nonstick slow cooker from All Clad which makes for easy clean-up. Then, all you do is dump in the ingredients in a special order.
- Pour Corn and Chili Salsa in the bottom of the slow cooker.
- Lay Chicken Breast on top. I used 3 which is 1 1/2 pounds of boneless skinless breasts.
- Pour Salsa Autentica on top of the chicken breast. Try to coat them all the way. I used 3/4 cups which was about half the jar.
- Cook for 2 Hours on High (which is about 4 hours on low).
- Shred the chicken breasts right in the slow cooker.
- Set to warm until ready to eat.
Now for the Science behind how to cook chicken in the Slow Cooker and have it taste amazing! Not dry! Not Mushy!
Only use 1/2 cup of liquid per pound of chicken!
I made 1 1/2 pounds of chicken so I used 3/4 cups of liquid/salsa.
I love to serve Fiesta Chicken with either Trader Joe’s Frozen tamales or their Southwestern Chopped salad. This recipe makes great chicken for Taco night served plain or with tortillas.
