Hello sheet pan chicken tacos! Where have you been all my life? I make tacos, of some variety, every week for my family. The kids love tacos! It’s a meal they actually look forward to eating, which I love because there isn’t any complaining about what’s for dinner. As a busy mom, I am always looking for an easier version of my classic recipes. So I developed a sheet pan chicken taco recipe for my family. Have you made a sheet pan dinner for your kids? They are super easy, can be prepared ahead of time, and have minimal clean up, which this busy mom loves!
Whenever I make a sheet pan dinner, I do any prep work ahead of time. These easy chicken tacos don’t require a lot of effort. I like to chop everything earlier in the day, when I have more time. Then when it’s time to make dinner all I have to do is lay everything on the pan. Sheet pan meals work best when the food is not too crowded on the pan, this allows for even cooking. I recommend using what is called a half sheet pan which measures 13″ x 18″.
This recipe only requires a few simple ingredients. You will need boneless skinless chicken breast, a red pepper, and a sweet onion. Thinly slice the pepper and onion. Chop the chicken into small pieces. Mine are usually about 1-2 inches long and half an inch wide. Since I’m cooking for kids, I keep the chicken fairly small so they can easily chew it, and I don’t have to cut anything else once the meal is cooked. Easy!
Next, while still on the cutting board, I sprinkle the chicken and veggies with some olive oil. Then, I sprinkle on salt, pepper, garlic powder, and Mexican seasoning. My favorite brand is Frontier Seasoning Blends Mexican Fiesta (available at Whole Foods or on Amazon), but any Mexican seasoning will work. If you don’t have any, just sprinkle the chicken with chili powder, cumin, and some paprika. Life is busy, and these are easy tacos, so what ever works:)
If you line your sheet pan with aluminum foil before putting your taco ingredients on the sheet, then clean up will be a lot easier. As I transfer the food from the cutting board to the sheet, I use my fingers and mix it around a bit to make sure all the food is covered in seasoning:) Why waste a bowl or a spoon, that’s just something else I have to clean later! I like to arrange the food on my sheet by ingredient. Since my kids don’t like onions, this makes serving easier. But you could mix everything together and lay it on the sheet, it will still taste great! At this point, the sheet pan chicken tacos are ready for the oven. If you are prepping ahead of time, then cover the sheet with plastic wrap and put it into the fridge for later.
Preheat the oven to 400 degrees. Cook your sheet pan chicken tacos for 15 minutes. After 15 minutes, I take the pan out and sprinkle my chicken with shredded cheese. I like the Mexican Cheese mix at the store, but cheddar would work too. Then, put the pan back into the oven for about 3 more minutes to finish cooking and melt the cheese. If you don’t like cheese then skip this step, but I would still cook the chicken another 3 minutes, for a total of 18 minutes.
Now you are ready to assemble your chicken tacos. I like soft flour tortillas, but by all means use corn if you prefer. You could also make burrito bowls instead of tacos. This is such a versatile recipe.
