The holidays are a busy time for everyone, especially us moms who are already busy to begin with! At Easter, our to do list includes stuffing eggs, dyeing eggs, organizing egg hunts, choosing crafts, preparing special foods, and planning parties. Oh the things we do for our kids! I’m tired just thinking about this list! Since time is of the essence, this Easter I decided to make an easy Easter Cookie for dessert. With two simple ingredients, I have created these cute Cadbury Egg in a Nest cookies. They are easy simple cookies that your kids will love! At least mine did, they ate all the cookies before Easter! Time to make a second batch:)
Gather your Supplies
Preheat oven to 350 degrees. For these easy cookies you will need one package of refrigerated sugar cookie dough (24 cookies), some mini Cadbury Creme Egg Candies, 24 mini muffin liners, and a 12×9 cookie sheet. If you have a mini muffin tin then by all means use it, but I don’t have one and didn’t really need it. Since these cookies are so simple, a cute printed liner adds a lot to the presentation of your dessert.
Open the cookie dough and let it warm for a few minutes.
Let the cookie dough get the chill off while you prepare your baking sheet. This makes the dough easier to work with.
Assemble the Mini Muffin Liners
If you aren’t using a mini muffin tin pan, then use a small baking sheet, mine is 12×9. Twenty four liners fit perfectly on this size sheet. I also doubled up on the liners to give more strength to the cookies while baking.
Roll each precut square of cookie dough into a ball and place one inside each liner.
Put the cookies into a 350 degree oven for 15 minutes.
Unwrap your Mini Cadbury Creme eggs while the cookies are in the oven.
I realized while the cookies were baking that I only had 12 Mini Cadbury Creme Eggs and I needed 24! Leave it to this busy mom not to notice until now! So I went on a search in my pantry and found Cadbury Candy Coated Mini Eggs to use for the rest of the cookies.
After 15 minutes, the cookies will be puffed up inside the liners and ready to come out of the oven.
Take the cookies out of oven and quickly place one egg in the center of each cookie. The cookies will deflate.
Remove cookies from the pan and let them cool on a rack before eating.
Aren’t they cute? When the Cadbury Egg gets pushed into the cookie it naturally forms a nest. Perfect for Easter!
